Matzah is unleavened bread eaten for the duration of the Passover festival. According to Jewish law, owning or eating chametz (leavening) is forbidden. When God delivered the Jewish people from captivity in Egypt, they departed in such haste that their bread remained unleavened.
Matzah that is kosher for Passover must be made from only two ingredients; flour and water, and within eighteen minutes, from start to finish.
Shimura Mtzah takes its name from the Hebrew word ‘to guard.’ It is a mitzvah that the Passover matzot be made specifically for the Passover seder and fulfilling the obligation to eat matzah as it is commanded in Exodus 12:17 “You shall guard the matzot.”
From the time the wheat is taken to the mill to be ground into flour, it is kept under supervision. This careful supervision ensures that the wheat does not contact water or moisture. The machinery is kept meticulously clean and dry during the grinding and processing to avoid contact with moisture and possible fermentation.
Shimura Matzah is not baked the same that it has been ground as another precaution to avoid any fermentation. The entire process is overseen, including kneading and baking.

Shimura Seder Matzah
Yehuda Matzos is a beloved Israeli matzah manufacturer. It is now in the care of the seventh generation of the original founding family, the Ludmir family.
The bakery was first established in the small northern town of Zefat in 1921. After Israel was declared a state the company relocated to Jerusalem, the Holy City, in 1949, where they have since then, making and baking matzah, cookies, and biscuits in addition to matzah flour for home use.
