
Homemade Hummus
It’s the quintessential Middle Eastern dip made by blending chickpeas with tahini, garlic, and citrus.
Hummus is usually served in a flat dish with a trough swept around the middle that holds olive oil. It is then sprinkled with paprika, za’atar, 7spice mix, and/or chickpeas.

Soak chickpeas overnight in 4 quarts of water.

In a large soup pot, boil the chickpeas in enough water to cover the chickpeas by 3 inches (ca. 8 centimeters) until tender, about 45 minutes to 1 hour. Add more water if needed, so the chickpeas are always covered with water.

Drain the chickpeas, reserving ¾ cup of the chickpea cooking liquid.

In a food processor, place the cooked chickpeas, garlic, tahini, lemon juice, olive oil, and water in which the chickpeas are cooked.

Process until smooth. Add water, lemon juice, and olive oil as needed to get the desired texture.

Serve hot with olive oil and hyssop or a fresh hard-boiled egg.
