In 1973 a group of new immigrants moved to the Golan Heights to establish an agricultural settlement. Just as they were developing the land, war broke out, and they all had to evacuate their farms. At the end of the war, they all returned and began working the land and growing delicious grapes and olives.

In 1999 they made a collective choice to turn their settlement into an organic one, and they set about to change all of their agricultural practices. Along the way, they learned patience, as they found new ways to deal with insects and better ways to feed the soil!

The members all agreed that the difficulties and challenges were worth it. It has meant that they can preserve the environment and grow fresh, quality produce while also maintaining a healthy environment.

They grow their grapes in the southern Golan Heights, known for its rich black soil, hot summer days, and cool nights, providing a fertile growing environment for the grapes.

For many years Nova Winery harvested their grapes for the Golan Heights Winery. In 2011 they decided to begin production of their organic wine! Over the past decade, under the guidance of Eitan Rosenthal, they have produced well-respected kosher, organic wines.
