Za’atar Pita

The Za’atar Pita or Zaktar bread. It is also known by the name manakish zaatar. It’s a flatbread topped with Za’atar spice mix. To simply put, it’s the Middle Eastern delicacy similar to pizza/focaccia.

Mix the flour with the yeast and sugar in a bowl. Add salt and 1 pint warm water. Let stand 10 minutes.

Mix dough to combine, then knead for 10 minutes until you have a smooth and flexible dough.

Cover with a clean towel or cling film and let rise in a warm place for 1 hour until the dough doubles in volume.

Flour a work surface. Divide the dough into 12 equal balls, cover them with a towel and let them rest for another 20 minutes.

Preheat oven to 475°F.

Line a large pan with baking paper. On the floured surface, roll out each ball into a round, thin circle. Use liberal amounts of flour so it does not stick.

Place the dough circles on the baking sheet.

Mix the oil with the za'atar in a bowl and brush each dough circle on top with the spice mixture.

Bake for up to 15 minutes, or until the pitas are puffed and browned.

Allow to cool for 10 minutes before serving.
